4 large bell peppers, tops and seeds removed
4 links of Boudin Sausage
1 can stewed tomoatoes
Remove the casing from the sausage and crumble/pack 1 link into each pepper. Top each with a slice of the stewed tomato and pour the liquid from the tomatoes on top of and around each pepper. Place upright in the crock pot and cook on low for 6 hours. The tomato almost melts and becomes a sweet contrast to the spicy sausage inside. Boudin sausage is a bit on the dry side so it’s important to pour some of the liquid on top of the peppers before cooking.
