This soup will make your whole house smell amazing. It’s the perfect comfort food and can easily be fixed on your stove, or in the crock pot.
2 Boneless/Skinless Chicken Breasts (cut into bite size pieces)
3-4 Carrots (chopped into bite size pieces)
2-3 Celery ribs (chopped into bite size pieces)
1 small onion (rough chopped
1 clove garlic – finely minced
1/2 tsp thyme (more if using fresh)
1/4 tsp sage (more if using fresh)
1/4 tsp turmeric
1 Knoor Homestyle chicken stock (they come in packages of 4)
Approximately 10 cups water
2 cups dry egg noodles
Put all ingredients, except the noodles, in a heavy soup pot. Bring to a simmer and cook until the chicken is cooked through (approx. 30 minutes). Taste broth and adjust the salt/pepper as needed to your taste. Add the noodles and cook an additional 7-8 minutes, or until the noodles are al dente. I often put all the ingredients into the crock pot and let it cook throughout the day. The aroma is just amazing. When I’m ready to serve I transfer it into a soup pot to cook the noodles. I think they cook better on the stove than in the crock. Also, please note that the spices are guestimates because I never measure when I cook. You may need to increase them to your taste.
